for me I bailed on Mini Ninjas..it was ok, but to slow paced.

I really really liked it and it was only a rental, but it's just too damned hard. I got stuck on Soda Popinski for two hours before I just said *** it.

Well, I didn't just bailed on this game, but Shadow of the Colossus is one. I had a hard time defeating the 6th colossi. Then there's Xenosaga, Mario Galaxy, DS Phantom Hourglass...and a few more, but these just popped up in my head. I really enjoyed the ones I listed, but when I got stuck, I stayed with it for a while and gave up and never played it again. The only one I can see myself playing again is Phantom Hourglass.
I bailed out on Phantom hourglass too. I think it was during the wind temple.
Overlord... no map - major pet peeve. I kept getting lost trying to find the green hive.
I like finishing a game and I find I'll bail on a lot of them for a long time then come back and finally get what everyone is saying about the game and finish it up. But I just bailed on my second play of Metal Gear 4, once you see it you don't really have much to go back to sure I got all my guns and new stuff but meh I don't need them.

I'm glad I'm not the only one to bail out on Phantom Hourglass. It was a good game, but it didn't do it for me like Link's Awakening and the Oracle of Seasons and Ages games. Also, Odin Sphere, FFX and Banjo and Kazooie Nuts and Bolts. I liked Odin Sphere at first and then I got bored with it...or more like stuck with it at a certain point and then bored. Point is, I didn't go back to it. I tried to get back into the FF series again with FFX (FFVII was my first), and I really loved the story, cutscene and music, but I don't like the battle system. I just got tired of playing BK, cause I really didn't enjoy building vehicles. It's a cute and solid game, but that part got on my nerves.

I try my best not to leave a game unfinished, but a few that I haven't even gotten past the main story on are as follows:
007: Agent Under Fire (campaign drove me batty)
Resident Evil 5 (bored me for some reason, which makes me sad)
Banjo-Kazooie: Nuts & Bolts (got annoying towards the end)
Oblivion (not sure why, but I can't get into it; still haven't done the first quest)

Wii Sports Resort Table Tennis. Worst sim of the bunch, IMO, and I'm just terrible at it. My 6-yr-old has a better score than me. I totally pwn on Swordplay Showdown, though.
I used to keep a list of games that I played but didn't finish. Gave up on that mentality somewhere around 1994, I think. The one that always comes to mind is the original Metal Gear, and I've kept myself from playing any of the other games in its long franchise because I never beat the original. Just didn't seem right, and to go back to it now is ...well it sucks, frankly. It aged really poorly, and I'm just bored of it before the end of the first level.
Ohhh, and Viva Pinata Trouble in Paradise. It was cool at first, then when I got to level 40 something, I was bored to death. Co-op is better, but after 30 or so levels, it got boring. That game used to put me to sleep! The last thing I tried to do was make a particular pinata a resident so he can scare off Professor Pester. I don't think that game had an ending, so I think in this case, bailing out doesn't count.
